Honey Mustard Fish Tacos with Mango Salsa

Ingredients:

Fish

·         2 Tbsp olive oil

·        2 tilapia or cod fish fillets, thawed and patted dry

·        ¼ cup mayonnaise

·        2 Tbsp honey mustard

Salsa

·        ½ zucchini diced

·        1 small mango diced

·        ½ cup chopped tomato

·        ¼ cup diced parsley

·        1 Tbsp lime juice

·         4 Whole wheat tortillas

·         Sour cream - optional

 

Directions:

1.    Add oil to a skillet.

2.    Combine mayonnaise and mustard in a small bowl. Spread on one side of fish and place this side down on non-stick griddle pan.

3.    Cook fish until done (145 degrees) or about 5 minutes on medium high. Before you flip sides, coat with mayo/mustard sauce and cook skillet side down for an additional 5 minutes.

Meanwhile:

4.    Combine salsa ingredients in a small bowl.

5.    Cut fish into pieces and place ¼ in each taco with ¼ salsa. Top with sour cream if desired.

Tip: Thaw fish ahead of time and pat dry for a firm fish.
